The origin of Sushi dates back to 4th century BC in Southeast Asia. Sushi was prepared by preservation and fermentation of fish with salt and rice. The cleaned and gutted fish is stored in rice so that natural fermentation of rice, can help preserve the fish.
With time, however, it spread throughout China and was introduced in Japan too. Later on, vinegar was added to this recipe for better taste and preservation. Thereafter, fermentation rice was combined with not just fish alone, but also with various vegetables and dried preserved food. Hence, Sushi grew to be a cuisine, rather than way to preserve food.
The common ingredient in all kinds of Sushi is the rice. The difference depends on various fillings, toppings, and condiments, and in the manner in which they are put together.
There are various types of sushi such as Nigirizushi, Gunkan-maki, Temarizushi, Makizushi, and Futomaki.
